Posee un sabor peculiar, un alto poder para reponer energ\u00edas y resulta excelente fuente de calor para el cuerpo despu\u00e9s de un largo d\u00eda de caminata.<\/p>\n<h3>Cultura del Caldo Gallego en el Camino de Santiago<\/h3>\n<p>Esta es una de las comidas predilectas para los trabajadores del campo, m\u00e1s popular entre las localidades aldeanas que hacen vida en el Camino Franc\u00e9s para enfrentar las bajas temperaturas.<\/p>\n<p>Este plato es ideal para ofrecer una dotaci\u00f3n de nutrientes y calor al organismo despu\u00e9s de una larga jornada de trabajo que requiera esfuerzo f\u00edsico. Es servido en un taz\u00f3n o plato hondo de barro directo de la olla, por lo que suele estar muy caliente.<\/p>\n<h3>Es un plato con referencias hist\u00f3ricas<\/h3>\n<p>Este plato tiene referencia hist\u00f3rica de parte de conocidas figuras, tanto de la realeza hispana, como de escritores y expertos gastron\u00f3micos. Dando muestra de que es un plato adaptable a diferentes ingredientes.<\/p>\n<h3>\u00bfQu\u00e9 es necesario para hacer un caldo gallego?<\/h3>\n<p>Para comenzar necesitas hacerte con los siguientes ingredientes:<\/p>\n<ul>\n<li>Dos piezas de Chorizo<\/li>\n<li>65 gr de grasa de cerdo<\/li>\n<li>200 gr de falda de res o ternera<\/li>\n<li>4 patatas<\/li>\n<li>250 gr de Alubias blancas<\/li>\n<li>300 gr de Berzas<\/li>\n<li>1 cucharada de Aceite de Oliva<\/li>\n<\/ul>\n<h3>\u00bfTodo listo? Preparemos un Caldo Gallego<\/h3>\n<ol>\n<li>El d\u00eda anterior al que pienses realizar el Caldo Gallego, debes poner en remojo las alubias, esto ayudar\u00e1 a que ablanden r\u00e1pido y puedas hacer el caldo en menos tiempo.<\/li>\n<li>Para iniciar con el preparado escurre bien las alubias, despu\u00e9s en una olla grande agrega aproximadamente 5 litros de agua. Ahora vierte las alubias, la grasa, la carne y el chorizo en el agua. Enciende el fuego conserv\u00e1ndolo\u00a0medio y espera que la espuma empiece a brotar.<\/li>\n<li>La espuma que salga del caldo debes retirarla, por lo que debes estar atento. Mientras tanto ve pelando las patatas y c\u00f3rtalas en cubos, estas ser\u00e1n a\u00f1adidas en los \u00faltimos minutos de cocci\u00f3n. Cuando agregues las patatas debes retirar las carnes del caldo.<\/li>\n<li>Ahora pica en trozos las verduras para colocar en el caldo, estas deben ser incorporadas despu\u00e9s de las patatas. Para finalizar, quedar\u00e1 cortar las carnes en trozos peque\u00f1os para volver a echar en la mezcla.<\/li>\n<\/ol>\n<p>Solo queda mezclar bien para que los sabores se fusionen y surja ese sabor tan peculiar y atractivo de este caldo tan caracter\u00edstico, atractivo y delicioso de la gastronom\u00eda gallega.
